up here I've got a plate of wild brown
shrimp just to show you what we're gonna
do here to peel it now we start
underneath the legs here just twist it
all the way around until you get to the
last layer of shell at the tail just
that piece right there you want to keep
on kind of gives you a handle so you can
dip your shrimp right you know what I'm
talking about
just like that it's real simple but just
to make sure you got it let's do one
more
again start with the center of the legs
and it just peels right off all the way
around until you get to that last layer
of shale at the tail
okay now once you get all those peeled
you can move on to the batter batter is
easy a couple cups of flour here some
salt some pepper and a little bit of
paprika all we're gonna do is just
thoroughly image that now in another
ball got a couple eggs here when I add
some milk and some hot sauce
this is gonna give it a little bit of a
kid I'll just mix that up well get ready
to dip our shrimp now the first thing
we're gonna do because shrimp is wet you
want to dry so the batter will stick and
stay on it we don't want to falling off
so we're gonna toss it in the flour
first like this get it fully coated this
also gives it that extra crispy that you
want on the shrimp well it's looking
like this you're ready for the next step
which is shaking every one of these
things off so you don't have excess
flour you don't want to crowd your egg
wash with extra flour okay it's just
gonna make it pasty and it's a mess so
once you get it like that we're gonna
put it in the egg wash and just fully
coat both sides I have to worry too much
about the tails cuz you don't need the
shell but just make sure that the meat
itself is fully covered on the strap
it's really a critical stage mostly
because you want that double there
that's your crispy on the shrimp and
they need it to stick you don't want it
to fall off so once it looks like this
you're ready to throw in the flour and
get that double layer coat just like
that just the way you want it and then
what I do is I'll take a handful of them
I just toss them in there and work it
back and forth until they're all like
that you see they're perfect ready to
hit the fryer now when you're putting
these in if you touch the oil first then
drop you won't get any splash at 350
degrees these will be done in the next
five minutes
what you're watching for is for them to
float up to the top and then get their
color once they get this color
you're ready to go
